This is a big time cheater way to make a quick and easy Bearnaise sauce.    Bearnaise Sauce

If you are adept at making Hollandaise, go for it and simply add the steps below to make it a Bearnaise.   

Look in the Cooking Tips section for how to make Hollandaise.  It's not hard at all. 

If you are secretly afraid of making a Hollandaise,  then get a dry (Knorr Swiss type) mix and make one according to package directions and then add the steps below.  Oh, I know,  you can buy a dry Bearnaise mix too...but trust me doing it this way is so much more fresh tasting and better.  But do try making a fresh sauce, it's really easy.

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
     1/4  cup           green onion -- minced
     1/4  cup           tarragon vinegar
     1/4   cup          chopped fresh parsley
   2      tablespoons   dry white wine
   1      tablespoon    capers -- rinsed and drained

1.  In small saucepan combine ingredients and simmer till vinegar has almost evaporated.

Whisk into Hollandaise sauce.

Serve over salmon, chicken, steak, .....heck, it would make cardboard taste good!!
