You can use this recipe for any good firm white fish.  
It is especially good with fresh halibut in season.

Baked Halibut Portuguesa

  Amount  Measure       Ingredient -- Preparation Method
   --------     ------------       --------------------------------
   8              portions           fresh halibut -- nice big fillets
   1              large                ripe tomato -- peeled and chopped
   1              med                 onion -- minced
   3           large cloves       garlic -- crushed
   1/4          cup                   extra virgin olive oil
   1             tsps                  sugar
   1/4         cup                    fresh parsley -- minced
   1/4         cup                    tomato paste
   1/2         cup                    white wine or sherry
   1/2         cup                    water
    1/2        tsp                salt                 
    6-8                                 fresh mint leaves
                       lemon slices
                        butter bits

Saute tomato, onion and garlic in olive oil till golden and soft.  Add  salt, sugar, parsley,                     tomato paste and wine.   Simmer till well blended.  Add water and mint and blend well.

Place fish in buttered baking dish, pour sauce over fish and top with lemon slices and                             dot with butter. 

Bake tightly covered at 375 for 40 minutes till fish is tender.
