This is another one of those old time Southern cakes that your grandmother made if you begged Mississippi Mud Cakeher!! 





What kid doesn't love chocolate and marshmallows?   Make this for your kids....make it for yourself!   It will definitely bring out the kid in you.

  Amount  Measure   Ingredient -- Preparation Method

     2       sticks        butter
     1/3    cup           cocoa
   1         cup           pecans -- chopped
   1         cup           coconut flakes
   1 1/2  cups          self-rising flour
    1        pkg           miniature marshmallows

              
    ICING                
     1/2   cup           butter
     1/3   cup           cocoa
   5        tablespoons   milk
   1        box           confectioner's sugar


1.  In mixer bowl put 2 sticks softened butter, 1/3 cup cocoa and 2 cups sugar.   Beat till creamy and fluffy.

2.  With mixer on low, add 1 1/2 cups self rising flour.  Then add 1 cup chopped pecans and 1 cup coconut flakes.    Beat well.

Pour into greased and floured oblong cake pan and bake at 350 for 30 minutes.

Remove from oven and cover cake with miniature marshmallows.  Return to oven just long enough to melt the marshmallows.

While cake is baking make the icing.

In mixer bowl put 1/2 cup softened butter, 1/3 cup cocoa, 1 tsp vanilla and 5 tablespoons milk.   Beat together, then with mixer on low add 1 box of confectioners sugar.    Beat till very smooth.

When cake has cooled a bit pour icing all over the top of the marshmallows.
