When I was growing up in Tennessee, this was my most favorite chocolate cake.  The mayonnaise Mayonnaise Cakegives it a subtle flavor that you cannot find with anything else.    I ate this cake carefully, completely dissolving each bite in my mouth to get as much flavor as I could out of every bit.     I'll bet you will too.

If you want to be completely decadent, serve a nice piece of this cake topped with some really good vanilla ice cream.

  Amount  Measure       Ingredient -- Preparation Method

   1           cup           real mayonnaise
   1 2/3    cups          sugar
   4           large         eggs -- room temp
   1           teaspoon  vanilla
   2           cups          flour
                pinch         salt
     2/3      cup                 cocoa
   1 1/4     teaspoons     baking soda
     1/4      teaspoon       baking powder
     1/3     cup                  water

1.   Sift together and set aside.  Flour, salt, cocoa, soda, and baking powder.

2.  In mixer beat together water,  mayonnaise, sugar eggs and vanilla.  Beat till fluffy.

3.  With mixer on low, add in sifted mixture until incorporated.   Beat till smooth and fluffy.

Bake in oblong cake pan that has been greased and floured.    Bake at 350 for 20-25 minutes.     Frost with chocolate frosting.


Frosting

1 stick  butter at room temperature
2/3 cup Hershey's unsweetened cocoa powder
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

Beat together till creamy and smooth and put on top of cooled cake.
